TCC “Chamber Keeper” Jonathan Choa is at the helm of ‘Raising the Tsokolate Bar’

TCC “Chamber Keeper” Jonathan Choa, 23, is at the helm of ‘Raising the Tsokolate Bar,’ a program of The Chocolate Academy to uplift standards and share the discovery of working with tablea chocolate, revealing the potential and unique qualities of Philippine cacao.

He first learned how to make molded chocolates when he was 15. His exposure happened at ADM Cocoa PTE LTD., maker of deZaan premium cocoa in Singapore, back in 2013.

He went back in 2015 to improve his knowledge and skills under the tutelage of seasoned ADM chocolatiers. Despite the acquired learnings about foreign chocolate, Jonathan, with the guidance of the “Chocolate Queen,” continues to uphold the value  and versatility of homegrown cacao and chocolate.

Jonathan is also in-charge of production and grinding the cacao beans and got acquainted with baking through his mother back in the province when he was 13 years old. He innovated three varieties of pandesal namely; Tablea pandesal with tablea chocolate ganache, Plain pandesal and Malunggay flavor. These chewy pandesal is best paired with TCC’s Tablea Chocolate Peanut Butter which is one of the first few product developments of The Chocolate Queen Raquel Choa.

Today at 3:21 p.m., The Chocolate Chamber will conduct a chocolate making and appreciation event “Raising the Tsokolate Bar” at TCC Boutique in Robinsons Galleria Cebu which will be handled by “Chamber Keeper” Jonathan Choa. Jonathan will share the wonders of cacao as it transforms into the chocolates we all love and demonstrate on how to melt, temper, and mold chocolates into various shapes using the Tsokolate Bar.

The Chocolate Chamber’s Tsokolate Bar was developed from their handcrafted tablea as an essential ingredient, a product that you can buy at the TCC Cafe in case you want to make your own at home. Get to experience the Tsokolate Bar as a drink and as molded chocolate right after the chocolate-making demonstration.

Message The Chocolate Chamber for reservation. TCC will only accept a maximum of six persons for the activity. Participation fee is only Php 385 per person for a duration of 30 minutes. The next activity is scheduled on November 4 at 3:21pm.
